The origins of the cheese dairy can be traced back to Celestino Paleni who, in the initial post-war period, was already producing traditional cheese from the milk collected from the pastures of Mount Avaro in the upper Brembana Valley. He later became the owner of the dairy, and the Caseificio Paleni cheese dairy was created in Gromo. Nowadays, it is his three children Nadia, Fabrizio and Massimo who uphold the family history. At present. All the cheeses are made with raw milk to preserve their organoleptic characteristics. The cheese is rich and creamy, with a sweet taste that makes it unique
